Made-up versus concentrate

The per-100g figure describes the cube or powder, not the liquid. What matters is the salt in a made-up portion, which is what actually reaches the plate.

Reduced-salt stock cubes are widely available and typically carry between a third and a half less.

Cooking for children

The daily salt limit is 2g for a child aged 1 to 3 and 3g for a 4 to 6 year old. A single portion of standard gravy can use a substantial share of it.

Building flavour with herbs, aromatics and acid rather than stock is the practical route to reducing salt in family cooking.
