Scores use the UK nutrient profiling model 2018, published by the Department of Health and Social Care in January 2026, computed per 100g from the portion weights Subway publishes. Points are given for energy, saturated fat, free sugars and salt, then subtracted for protein, fibre and fruit, vegetable, nut and seed content. A lower score is better. Foods scoring 4 or more are classed as less healthy.
Subway publishes fibre, so Boone uses its figures rather than estimating them. Free sugars deduct the natural sugar in the salad vegetables, estimated by Boone. Vegetable content scores zero for subs, wraps and spuds, which fall below the model's 40% threshold; salads are credited from Boone's estimate of their vegetable share.
Footlongs are excluded because their per 100g values, and so their scores, are identical to the 6 inch versions. Dunk pots are excluded because a per 100g score is not meaningful for a sauce. Beef Chilli Salad is excluded because Subway's published row duplicates another item. Lite Mayo fibre is treated as zero because the published 7.5g is not plausible. That leaves 120 items.
